AVANT GARDE COLLECTION
Avant Garde Collection is our permission to explore, experiment, infuse, co-ferment, wild ferment, distill, macerate, battonage and purposely cellar beers in bottles – an exploration & study of bottle ageing and intra-bottle transformation.
We purposely left barrels & wood ageing out of the equation with the intention to embrace the subtleties (and overtness in some cases) that can eventuate with time and patience when various local & wild strains of yeast/bacteria are allowed to blossom, impart and express themselves in the beer without any oak or wood (or overt malt/hop characters) to steal the show.
The majority Avant Garde Collection have been bottle-aged from 9 months - 18 months ++ AN EVOLUTION IN TABLE BEERS

Farmhouse Style - Workers Beer - Floral Crisp Refreshing
Our ‘Provision beer’ that is drunk frequently and for reasons of hydration (by us anyways) is a light 3.8% ABV light bodied beer that embodies the spirit of a true provision beer. The unique wild yeast here imparts tart refreshment with a hint of wild woods.
Farmhouse Ale - Mixed Fermentation - Earthy, Tart, Piquant
To say overt is an understatement – perhaps the opposite of the provision beer. There are no subtleties with the Soixante, just pronounced wild yeast wet hay & horse stable characters. This beer will polarise yet delight for some. This experiment shows what can happen when time and wild yeast are allowed to hangout with the an abundance of food.

Our interpretation of an easy drinking Farmhouse – style table beer. Creamy rounded mouthfeel that pairs well with crusty bread and a simple elegance that can be drunk all day long.
