We are pleased to announce that our Wild Tripelle V2 is now officially available. La Sirène Wild Tripelle is a 100% spontaneously fermented ale produced with our authentic airbourne indigenous yeast in Alphington.
The Wild Tripelle this time has taken us on a different journey however a journey that we are loving at the moment. Fermented in our open tank next to our Brewhouse and allowed to ferment naturally since early January, the warm ambient temperatures at the time of inoculation and subsequently hotter fermentation allowed more of the active acetobacter within the environment to express themselves in this beer along with the wild strains of yeast that are indigenous to our brewery to give this beer a drier and more acid-forward finish compared to V1. We feel that the natural lactobacillus in this beer (also resident in our brewery) may evolve further in the bottle over time and along with the classic brettanomyces characters to keep this beer bright and refreshing for many months to come.
Wild Tripelle V2 (8% ABV) available in 375ml bottles (case of 12) Pouring a golden orange and with a creamy lingering head, the Wild Tripelle V2 has upfront aromatics of citrus rind, wood & apricot kernel. The mouthfeel of this beer is what excites us most as the velvety yet intriguingly spritzy notes wash over the palate and wake up the taste buds with a bright sweet acidity and toasty wood-like characters. This beer finishes refreshingly dry & citrusy with a kiss of lovely acetic on the back pallet that keeps you coming back for more.
We feel the Wild Tripelle V2 will age gracefully over the next 14-19 months as the natural souring bacteria and the brettanomyces mature in the bottle giving rise to classic horse-stable and forest floor characters to shine through. We recommend storing @ 15-18c for this development to occur over that period of time.
For those that have not followed the journey with us about our spontaneous projects, we have been experimenting with truly wild & 100% spontaneous ferments since 2010 and after years of pilot trials trying to better understand what resident microflora is indigenous to our brewery, we released the Wild Tripelle in November 2015. The Wild Tripelle V2 is the second succession of this beer and allows us to truly showcase the concept of making beer with a sense of place & time. This project is one of many we have in motion where the focus is to better explore and experiment with the wonderful yet highly unpredictable world of spontaneous fermentations.
*BTW the Wild Tripelle V1 made it into the last round of tasting for judging under the ‘experimental beer’ category at the World Beer Cup awards 2016 in Denver this year so we are looking forward to seeing how the V2 goes in 2017.
